Some good friends of ours were having a little NBA Draft party last night. So at the last minute I decided to whip up something quick that people would love! Now, sometimes it's hard to know what foods will be a big hit and what will not! I figured I was safe making something with peanut butter and marshmallows! And it was indeed a huge hit! So I'm posting this smooth, creamy and sweet little treat for everyone who asked for the recipe at the Draft party last night, as well as all of you! Enjoy!
Ingredients
1/2 cup (1 stick) butter
1 3/4 cups brown sugar
1/2 milk
1 cup mini marshmallows
3/4 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups powdered sugar
Melt butter in a medium saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil and continue to boil for 2 minutes, stirring frequently. Remove pan from heat and stir in marshmallows, peanut butter and vanilla. Stir until mallows and peanut butter are melted and incorporated in. Pour the warm peanut butter/mallow mixture into a large mixing bowl and add the powdered sugar. With electric beaters, beat until smooth. Pour into an 8 by 8 inch dish and chill until set up and firm, then cut into squares.
