Hey everybody! My sis-in-law, who lives down in Southern Cal, tried a really yummy cookie a few weeks ago and knowing I'm always up for hearing about yummy treats, she sent me the link! The Baking Bettys out of Orange County make a cookie that is drawing some attention! They call it the S'more Cookie. YUM! I haven't tasted this cookie first hand, and until I can, I'll take my sis's word for it and improvise with an experimental recipe of my own! In a nutshell, I took my basic milk chocolate chip cookie recipe and added a few ingredients to it! The flavor results were so good! A chewy cookie that had the subtle taste of graham, with hersheys bar chunks and mallows! The only thing I would do different next time? I would keep the mallows out of the dough and add them on top of the cookie right out of the oven! Even though they were gooey and good melted into the cookie I think it would be more pleasing to the eye to see them slightly melted on top!:)
Preheat oven to 350 degrees
Cream together:
1 cup (2 sticks) butter, softened
1 cup brown sugar
1/4 cup granulated sugar
Add & mix:
1 teaspoon vanilla
2 eggs
4 whole graham crackers finely crushed (measures just over 1/2 cup)
Add & mix:
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Add & mix:
1 cup chopped hersheys milk chocolate bars (3 whole bars or use milk chocolate chips)
Drop by small teaspoonfuls onto cookie sheets and into the oven for 10 minutes. Immediately out of the oven place 3 or 4 mini mallows on top of each cookie!
For some reason I couldn't link to the Baking Bettys website. So go to Bakingbettys.com to see what they are all about!
