Sunday Cookies

Inevitably, on a lazy Sunday afternoon, my little family starts to crave something sweet and munchable. These are what I make 9 times out of 10. They just get the job done. Another bonus is that the recipe makes 7 dozen, so you can refrigerate the dough and bake off small batches through out the week when an opportunity arises (I LOVE to do this-- thanks for teaching me Starr!). I can't tell you how many times someone has popped in unexpectedly and I've been able to pull the dough from the fridge and bake off a mini batch to feed them-- I don't like people to leave my house hungry....I think I get this from my mom.

Recipe:

1 lb butter (4 sticks of butter)
2 cups white sugar
2 cups brown sugar
4 eggs
4 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla
3 1/2 cups oats
milk chocolate chips (or whatever "chips" you have on hand-- I like a combo of butterscotch and milk chocolate)

Cream softened butter and sugars. Add eggs, baking soda, baking powder, salt, and vanilla. Mix well. Mix in oats. Continue mixing while slowly adding flour. Finally add chocolate chips (a bag and 1/2 should do the trick-- more or less).

Bake at 400 degrees for 8 minutes only.

  3. Can't wait to pop in on you. Last time I got that awesome chocolate sheet cake that kind of tasted cinnamon-y. Did I ever tell you that I pulled over 3 minutes from your house because I couldn't wait until I got home to eat it?
