This cake makes me smile. I like it, a WHOLE lot! When I think of this cake, I think of spring and summer. I picture end of school bake sales, or small town carnivals where you find the ultimate comfort foods! This cake to me, IS comfort food. Warm and moist, sweet and gooey. PLEASE! Don’t just take my word for it. Try it! You will not be disappointed! It’s just SO.DANG.GOOD!
Preheat oven to 350 degrees
Pour 1 1/4 cups boiling water over 1 cup oats, cover and let stand 20 min
Cream together:
1/2 cup (1 stick) butter, softened
1 cup granulated sugar
1 cup brown sugar
Add and mix:
1 tsp vanilla extract
2 eggs
Add and mix well:
Cooled oats
Add and mix:
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
Pour into greased 9 by 9 inch pan and bake for 45-50 min or for thinner cake, 9 by 13 in pan and bake for 25-30 min on center rack. When cake is done and out of oven turn off bake and turn to hi broil.
For frosting mix together: (I usually double the frosting for a thicker layer)
1/4 cup butter, melted
1/2 cup brown sugar
3 tablespoons half and half or canned milk
3/4 cup flaked coconut
Spread over warm cake and back into the oven, on center rack, under the broiler for 2-4 minutes, until frosting starts bubbling.
